The procedure for marking meat and offal
On meat of all animal species, a print of a veterinary stamp or stamp is put in the following order:
For meat carcasses and half-carcasses - one in the area of each shoulder blade and thigh;
For each quarter, bacon pieces - one stamp; for heart, tongue, lungs, liver, kidneys, head - one mark (mandatory for laboratory veterinary examination);
On carcasses of rabbits and nutria - two marks, one each in the area of the scapula and on the outer side of the thigh;
In the laboratories of veterinary sanitary examination, one bird is put on the carcass of the bird on the neck or the outer surface of the thigh (the marking of a game is done in the same way);
In meat-poultry processing plants, poultry processing plants and poultry farms put an electric seal on the outer surface of the leg:
In the carcasses of chickens, chickens, ducklings, guinea fowls on one leg;
In duck carcasses, goslings, geese, turkey poults and turkeys - on both legs;
Poultry carcasses that are subject to industrial processing are placed in the back area of an electric seal .
The meat of horses, camels, deer, bears, donkeys, mules, passed veterinary expertise, is branded with vetklaim and is stamped alongside an additional stamp.
There is no stigma attached to raw fat, but they stick several labels with a stamp of veterinary stamp.
Meat and offal of animals obtained under conditions precluding the conduct of a complete list of veterinary and sanitary research are branded with a rectangular «Preliminary Inspection» stamp and sent to one of the state veterinary institutions or enterprises for veterinary sanitary examination. Meat and offal, to be released only after decontamination and sent for processing to sausage and other products, is only a veterinary stamp, denoting the method of decontamination or diagnosis; oval stamp is not put.
On the meat boar put a veterinary stamp and stamp «Boar IP» (IP - industrial processing).
On the container with the poultry carcasses to be disposed of, several labels are pasted with the impressions of veterinary stamps, denoting a method of neutralization according to the rules of veterinary examination of meat and meat products: «Procooking», «On canned food» , etc.
On the carcasses (carcasses) of all animal species (including birds and rabbits), recognized by the results of the veterinary-sanitary examination unsuitable for food purposes, at least 3-4 impressions of a veterinary stamp with the inscription «Scrap».
Meat that has changed its veterinary and sanitary characteristics as a result of violation of the conditions of storage or transportation, is subject to repeated veterinary sanitary examination and rebranded with stamping and the preliminary removal of impressions of oval-shaped stamps. In all cases of detection, during veterinary-sanitary examination of carcasses and organs, changes characteristic of infectious and invasive diseases, veterinary-sanitary measures (disinfection of premises, equipment, etc.) are carried out in accordance with current instructions.
